Spaghetti with Clam Sauce

I really love spaghetti, so of course I’m up to try a different version of my favorite food.

24 oz – Clam (canned) with juice (2 standard cans)

8 oz – tomato paste (1 standard can)

1 pound – tomatoes (canned w/liquid)

4 tablespoon – butter, clarified

8 garlic cloves, minced

1 tablespoon – Parsley

1 tablespoon- Oregano

1 tablespoon- Salt

1 pound – Spaghetti

1 tablespoon – cooking oil

1/4 Parmesan cheese, grated

Serves 4

1)Saute garlic in about 2 tablespoon of butter until lightly browned. Stir in clam juice, tomato paste, tomatoes and liquid, parsley and oregano.

2) Simmer until reduced to about half. Stir in clams and remove from heat. This sauce should be reheated prior to serving.

3) Cook and drain spaghetti

4) In the empty cooking pot, melt the remaining butter and return spaghetti to pot and stir until coated uniformly.

5) Serve.
