Vegetarian Sloppy Joes

Since my success with vegetarian/vegan recipes lately, I figured making another one would turn out just as well (:


Cooking this was quite the adventure since it was a race against my stomach. I should have started making this about an hour before I was actually hungry. I still decided to give the recipe a try. Please don’t turn away just because it’s vegetarian. It was surprisingly delicious!


1 tablespoon olive oil

1 /2 cup of chopped onion

1/2 cup of chopped bell pepper

1/2 cup of cooked brown rice

About 15 oz of Mexican style pinto beans

3/4 cup of hickory smoke barbecue sauce

6-8 whole grain buns

Serves 6-8


A few squirts of ketchup and mustard to give it a tangy taste


1) Fill a pot with water and bring to a boil. Add brown rice. Cover for about 40 minutes. Rice should be soft.

2) Heat oil in a large skillet over medium-heat. Add onions and green pepper. Cook 2 minutes.

3) Add rice, beans, barbeque sauce and any additional sauces. Simmer about 12 minutes, until heated through.

4) Serve on buns.
